My Sunday Best plus a sprinkling of fairy cakes!

I have had an incredibly long week this week and actually don’t feel like I have that much to shout about. I have felt a little rubbish and sorry for myself to be honest, so it has been one of those weeks.

My first Sunday Best was last Saturday Night which didn’t make last weeks post.

I had dinner cooked by hubby on Saturday Night which was lovely. He made homemade burgers and they were amazing. I managed to stay out of the kitchen for the whole evening and leave him alone to cook them which is unheard of.

My second Sunday Best was baking fairy cakes with my little man. I say baking with him, but it was more like running round the kitchen trying to beat the mixture whilst stopping him from pulling everything out the cupboard. Or hitting the floor with the wooden spoon I gave him so he could ‘help’ mummy. It was fun though and it was even more fun the mess he got into when he attempted to eat one.

They were so simple to make. I have copied the recipe here to share with you all –

Ingredients

90g self raisng flour, 90g caster sugar, 90g soft margarine, 2 medium eggs

Method

  • Heat the oven to 190 degrees
  • Put 12 paper cases into a tray
  • Sieve the flour into a bowl
  • Add the sugar, margarine and eggs
  • Mix them together until they make a smooth and creamy mixture
  • Separate into the cases
  • Bake in the oven for 15 minutes

I then left them to cool and made some icing with 100g icing sugar and 2 tablespoons of water to pop on the top with some little chocolate sprinkles.

My third Sunday Best this week is spending the day with my little man and seeing how much he is growing.

He makes me laugh all the time. I don’t get to spend as much time  with him as I would like so when I do I always try and focus on him.

  1. The burgers look great!I love making fairy cakes with the kids – they don’t half like to make a mess though as well you know lol!Little man looks like he’s having lots of fun there x #lovelythings
